Vieillissement sur lies（ヴィエイスマン・シュル・リー）は、瓶内で澱とともに熟成させることです。シャンパーニュの最低期間は、ティラージュから数えてノン・ヴィンテージで15か月、ヴィンテージで36か月です。1,2

シャンパーニュ委員会（Comité Champagne）によれば、実際にはノン・ヴィンテージは通常2-3年、ヴィンテージは4-10年熟成させます。3 ほかの規則では別の最低期間が定められています。
