disciplinare di produzione
Italian · production specification
A disciplinare di produzione is the Italian production specification for a DOC or DOCG; Franciacorta's was last amended by ministerial decree of 7 May 2024.1
A disciplinare sets the area, grapes, yields, method and label terms. Franciacorta's, for instance, fixes months on lees from tirage to disgorgement and the permitted dosage terms by type.2 The Asti disciplinare equates 'metodo classico' with 'metodo tradizionale' and requires at least nine months on lees for that type.3 Terms such as Millesimato, Riserva and Rive are defined in these texts. The French counterpart is the cahier des charges, the Spanish the pliego de condiciones. See DOCG and Franciacorta.
