A pliego de condiciones is the Spanish product specification of a DOP, for example the Pliego de condiciones DOP Cava.1

The Cava pliego defines Cava as a quality sparkling wine made by the traditional method, with at least nine months on lees in the same bottle and at least 3.5 bar at 20 °C.1 It sets the ageing categories, from Guarda to Paraje Calificado, a yield of 12,000 kg/ha and at least 25% red grapes for rosé base.2 It is amended over time: a resolution of 9 January 2026 changed the Paraje Calificado wording.2,3 Counterparts: French cahier des charges, Italian disciplinare.
