pas dosé
French · not dosed
Pas dosé is an EU-listed equivalent of brut nature: sugar under 3 g/L, with no sugar added after secondary fermentation.1
The phrase refers to the dosage, the liqueur that may be added before final closure, which here is left out.2 It carries the same legal meaning as brut nature, dosage zéro and dosaggio zero.1 Italian rules use it too: Asti DOCG allows sweetness 'from pas dosé to dolce'.3 Actual sugar may differ from the labelled term by no more than 3 g/L.4 Franciacorta lists the Italian form, dosaggio zero, among its permitted types.5 See pas dosé and sugar scale.
