Dégorgement à la glace

French · disgorgement with ice

Dégorgement à la glace is disgorgement after freezing the neck in brine at about -25 °C, which forms an ice plug about 4 cm long that traps the deposit.1

Sources give slightly different temperatures: the Comité Champagne says about -27 °C.2 When the bottle is opened, the pressure pushes out the ice plug with the deposit.2,1

This method allows mechanised lines that disgorge 2,000 to 18,000 bottles per hour.1 The manual alternative without freezing is à la volée. A doseuse then adds the dosage. In Champagne disgorgement may not take place earlier than 12 months after tirage.3 See dégorgement and disgorgement.
