Dégorgement à la volée
French · disgorgement on the fly
Dégorgement à la volée is manual disgorgement without freezing: the operator removes the cap and lets the pressure expel the deposit, at about 400 bottles a day.1
The bottle is held at an angle and opened by hand. The method is still used for large bottles and certain special cuvées.2,1
The usual alternative is dégorgement à la glace, where the neck is frozen first; mechanised lines disgorge 2,000 to 18,000 bottles per hour.1 In Champagne disgorgement may not take place earlier than 12 months after tirage.3 Afterwards the doseuse adds the liqueur d'expédition.1 See dégorgement and disgorgement.
