Metodo Martinotti

Italian · tank (autoclave) method

Martinotti method (autoclave) is the Italian name for second fermentation in tank; the Asti disciplinare requires at least one month for Asti made this way.1,2

The process is the same as cuve close or Charmat: fermentation in hermetically closed tanks, then clarification and isobaric bottling.2 Asti spumante is made sparkling by natural fermentation in autoclave, and the one-month minimum includes bottle refinement.3

Prosecco DOC Rosé requires a Martinotti/Charmat second fermentation of at least 60 days.4 Prosecco DOC spumante must be made in autoclave.5 See tank method, Asti method, Asti and Prosecco DOC.
