Centre de pressurage

French · pressing centre

A centre de pressurage is an approved pressing facility in Champagne, subject to INAO and interprofession rules; its approval criteria derive from a Quality Charter set up in 1987.1

The Comité Champagne notes that pressing centres are approved and inspected at regular intervals.2 The interprofession is the Comité Champagne, and appellation specifications are published by the INAO.3,4

The AOC specification requires musts to be settled before they leave the pressing centre.4 So the centre handles both pressurage and débourbage. The standard press load is the 4,000 kg marc, and Champagne presses range from 2,000 to 12,000 kg.1,2 See pressing.
