Crémant de Bourgogne
AOC since 1975 · traditional method
Crémant de Bourgogne is the AOC for white and rosé traditional-method sparkling wine from Burgundy, recognised in 1975.1 Chardonnay, Pinot Blanc, Pinot Gris and Pinot Noir must make up at least 30% of the cuvée, and the wine spends at least 9 months on the lees.1
Area and grapes
The production area covers communes in four departments: Yonne, Côte-d'Or, Saône-et-Loire and Rhône.1 Eight varieties are allowed. Black and grey: Gamay, Pinot Gris and Pinot Noir. White: Aligoté, Chardonnay, Melon, Pinot Blanc and Sacy.1
The core rule is about the blend. Chardonnay, Pinot Blanc, Pinot Gris and Pinot Noir together must make up at least 30% of the cuvée, and Gamay may not exceed 20%.1 A draft amendment from 2021 proposes raising the Gamay cap to 30%; until it is adopted, the 2018 text applies.2

Labelling
The words "Crémant" and "Bourgogne" must be printed in characters of the same size, and the appellation name appears on the cork.2
What we could not verify
The mentions Éminent and Grand Éminent are often cited with minimums of 24 and 36 months. They do not appear in the versions of the cahier des charges we read, so this page does not give rules for them. Production volumes for the appellation were not found on an official page either.
