Taille
French · second pressing
The taille is the second pressing fraction in Champagne, 500 L per 4,000 kg marc.1 The AOC specification describes it as fruitier, with more tannic richness than the cuvée.2
The taille follows the cuvée, the first 2,050 L from the same marc.3 Together the two fractions give 2,550 L.4 The specification requires pressing to be gentle and progressive, with the juices kept separate.2
Juice pressed beyond the permitted yield is the rebêche, which cannot be made into Champagne.2 Champagne presses range from 2,000 to 12,000 kg of whole grapes.5 Overall yield is capped at 102 litres of settled must per 160 kg of grapes.2 See cuvée vs taille and pressing.
