Coquard
French · Coquard press
The Coquard press is the traditional vertical press with a fixed basket, holding 2,000 or 4,000 kg, made by the firm Coquard; in 1985 the firm also introduced a horizontal press with tilted plates.1
The 4,000 kg size matches the marc, the standard Champagne press load.1 Champagne presses today range from 2,000 to 12,000 kg of whole grapes, and manual presses still account for 18% of those in use.2
Whatever the model, pressing must be gentle and progressive, with the cuvée and taille kept apart.3 Pressing centres, where such presses work, are approved and inspected at regular intervals.2 See pressurage and pressing.
