Remueur

French · riddler

A remueur is a riddler who turns bottles by 1/8, 1/6 or 1/4 of a circle; the Union des Maisons de Champagne says a practised riddler handles 50,000-60,000 bottles a day.1

Sources differ on a riddler's daily output, so the figure above is the Union des Maisons de Champagne's.2,1

The remueur works on pupitres, wooden racks holding 120 bottles each.1 The aim of remuage is to bring the deposit down onto the closure, with the bottle ending sur pointe.3,1 Much of this work is now done by gyropalettes.1 Manual riddling takes 4-6 weeks according to the Comité Champagne.2 See riddling.
