Gyropalette

French · riddling machine

A gyropalette is a computer-controlled riddling cage for 504 bottles that cuts riddling to one or two weeks; it was patented in 1968 by Jacques Ducoin and Claude Cazals.1,2

The Comité Champagne describes automated riddling machines with metal cages of about 500 bottles that run around the clock and reduce riddling to about a week.3,1 Manual remuage on a pupitre takes 4-6 weeks by its count.3

The goal is the same: bring the deposit onto the closure, bottle sur pointe, ready for dégorgement.4 See riddling and history of technique.
