kg/cm²

English · unit of pressure

Kilograms per square centimetre (kg/cm²) is an older pressure unit; the second fermentation of Champagne produces about 6 kg/cm².1,2

Where it appears

The Union des Maisons de Champagne uses it for the pressure built by the liqueur de tirage: about 24 g of sugar per litre plus yeast, giving roughly 6 kg/cm².1 Other sources give the same figure as about 6 bar at 20 °C.3

EU law uses bar; some specifications use atm.4,5 See prise de mousse and pressure.

A Champagne bottle is built to withstand 12 atmospheres (bottle pressure resistance).2
