isobaric bottling

English · OIV tank-method step

Isobaric bottling is the OIV term for filling tank-made sparkling wine into bottles under isobaric conditions; dosage may be added at this stage.1

Isobaric means at equal pressure. In the closed tank method this is the last step: after tirage in a closed tank and the second fermentation, the wine is clarified and then bottled isobarically.1 The dosage added here sets the sweetness category of the wine.2,3 A related OIV term is transvasage, the isobaric transfer of sparkling wine from one container to another; in Champagne it is allowed only for certain bottle sizes.2,4 For PDO quality sparkling wines made in closed tanks, the EU requires at least six months of production from the start of the sparkling fermentation.5 See also tank method and dosage liqueur.
