- Method: second fermentation in the bottle (Méthode Traditionnelle) only.1
- Time on lees: at least 36 months.1
- Sweetness: residual sugar up to 12 g/L.1
What sets it apart
Große Reserve is the only tier where the origin is a single municipality rather than a federal state, and the only one that allows a single-vineyard name.1,2 Its press-yield limit is stricter than for Reserve (50% against 60%), and its lees minimum is twice as long (36 months against 18).1,2
| Rule | Reserve | Große Reserve |
|---|---|---|
| Origin | one federal state | one Gemeinde |
| Minimum on lees | 18 months | 36 months |
| Press yield | max 60% | max 50% |
Approval
The tier name is granted by official decision after analysis and tasting at the federal institutes in Eisenstadt or Klosterneuburg, and the bottle must carry the mark "Österreichischer Sekt geschützter Ursprung".1
The full tier system, with the testing institutes and the origin mark, is described on the Austria page.
