Bugey Cerdon
AOC Bugey · ancestral method · rosé
Bugey Cerdon is a sweet, low-alcohol rosé sparkling wine of AOC Bugey in the Ain, made from Gamay and Poulsard by the méthode ancestrale.1 It keeps 22-80 g/L of residual sugar; the figures come from a 2010 draft text and may be outdated.1
Grapes and style
Bugey Cerdon is a rosé sparkling wine of aromatic type made from Gamay and Poulsard. It may not be made from Poulsard alone.1 It comes from listed communes of the Ain department.1
How it is made
The wine follows the ancestral method. It is made from partially fermented must, and the fermentation is controlled by cold and by removing yeast. Both liqueur de tirage and liqueur d'expédition are prohibited, so the sweetness comes only from the grapes' own sugar left unfermented.1

About the source
Bugey was first recognised as a VDQS by order of 11 July 1958.1 The only cahier des charges we could open is a draft submitted to the national opposition procedure in July 2010. The current consolidated text was not available, and the year Bugey became an AOC (commonly given as 2009) was not verified. Treat the figures above as the 2010 draft rules, which may differ from the rules in force today.
