extra seco

Spanish · extra dry

Extra seco is the Spanish term that EU law lists as the equivalent of extra dry for sparkling wine: 12 to 17 g/L of sugar.1 It is one of the sweetness terms used for Cava.2

In Cava

Not every Cava category may use it: Cava Gran Reserva is allowed only as Brut Nature, Extra Brut or Brut.3,2

On the scale

Extra seco is sweeter than brut (under 12 g/L) and drier than seco, the Spanish form of sec (17-32 g/L).1 Other forms: extra trocken, extra sec, extra dry.1 See Cava and the sugar scale.

Where the sugar comes from

After disgorgement the wine receives the liqueur d'expédition, cane sugar dissolved in wine; UMC gives 0 to 5-6 cl per bottle.4,5 Its amount decides which sweetness term the label may carry.
