Entreillage
French · stacking on slats
Entreillage is stacking bottles horizontally, head to tail, with wooden slats between the rows during second fermentation.1
Bottles stacked this way are said to lie sur lattes, on slats, which the OIV calls "placing in stacks".1,2 They stay there in the cave through the prise de mousse and ageing on lees; the Union des Maisons de Champagne says cellars are kept at 9-12 °C.3
When ageing ends, bottles move to remuage. See prise de mousse and ageing on lees.
