Adjuvant de remuage
French · riddling aid
An adjuvant de remuage is a riddling aid, such as tannins, bentonite or alginates, added at tirage so the lees form a deposit that slides into the neck.1,2
It goes into the bottle with the liqueur de tirage and the yeasts.2 Its effect shows months later, at remuage, when the deposit is gathered onto the closure,3 into the bidule under the crown cap.2
The deposit is then removed at dégorgement.3 Manual riddling on pupitres takes 4-6 weeks according to the Comité Champagne; machines cut this to about a week.4 In Champagne disgorgement may not take place earlier than 12 months after tirage.5 See tirage and riddling.
