One method

Both wines are bottled with yeast and sugar, ferment a second time in the closed bottle and are disgorged.1,7 The EU minimum for the term "traditional method" is 9 months on the lees, which is also the Cava de Guarda minimum.8,1 See traditional method.

Different grapes

Cava uses mainly Spanish varieties such as Macabeo, Xarel·lo and Parellada, with Chardonnay and Pinot Noir also allowed.1 Champagne rests on Pinot Noir, Chardonnay and Meunier.5 A rosé Cava base must contain at least 25% red grapes.1

Ageing tiers

Cava sets its tiers by time on the lees. All Guarda Superior wines (Reserva, Gran Reserva, Paraje Calificado) must come from organic vineyards and carry the vintage.1 In 2025 Guarda made up 88.05% of Cava sales and Paraje Calificado 0.02%.3 Champagne has two legal times: 15 months for non-vintage and 36 for vintage wine.2

The names

The name Cava first appeared in an official document in 1959 and was approved by the regulatory council in 1972.11 In 1960 an English court ruled against a sparkling wine sold as "Spanish Champagne".12
